What if your colander is missing too? Channel your inner MacGyver. Take three or four metal forks and arrange them at the bottom of your pot like the spokes of a wheel. The tines create a makeshift rack. Place your broccoli on top of the fork handles, ensuring no water touches the florets.
This method is wonderfully absurd, but it works. The forks elevate the broccoli, creating a steam pocket underneath. Just be careful when removing the cooked broccoli—the forks will be scalding hot. Use tongs or a spoon to fish out the florets. You’ll feel equal parts proud and ridiculous.

The Water Level Rule
Here’s a non-negotiable: Never let the water touch the broccoli. If it does, you’re boiling, not steaming. Boiling leaches nutrients and turns the florets waterlogged. Keep the water level about half an inch below your improvised platform. If you’re unsure, it’s better to have too little water than too much.
