Need a rule of thumb? Replace 1 tablespoon of oil with 1 tablespoon of butter, applesauce, or yogurt—or half a mashed banana.
For nut butters, use 1.5 tablespoons per tablespoon of oil. Remember: you can always add more liquid later, but you can’t take it out, so go slow.
Don’t Be Afraid to Experiment
This is where the fun really starts. Try blending a little applesauce with a dollop of yogurt for a crazy fluffy texture.
Or go half butter, half banana for a flavor mash-up that’s both rich and fresh. Your kitchen, your rules. The pancake police don’t exist.
