Safflower oil is almost entirely polyunsaturated fat. That sounds fancy, but it’s basically a slippery slope. Your body needs a balance of omega-6 and omega-3 fatty acids. Safflower oil tips that scale so hard, it should be arrested for dietary assault.

Here’s a fun fact: safflower oil has a high smoke point—about 450°F. That sounds great for frying, right? Wrong. When you heat polyunsaturated fats, they break down into toxic compounds called aldehydes. Think of them as the chemical equivalent of a smoke alarm that never shuts up.

One study found that heating safflower oil produces more aldehydes than deep-frying a doughnut in lard. That’s right: your “healthy” stir-fry is releasing chemicals that could, scientifically speaking, make your cells throw a tantrum. You’re better off frying a chicken in a campfire marshmallow.
