You pull the bird at 160°F in the breast. Now what? You don’t carve it like a maniac. You rest it. Tent it with foil and let it sit for at least 20–30 minutes. During that time, the temperature will climb another 5°F to safety. That’s called “carryover cooking.”
And that carryover is your best friend. If you carve too early, every lovely juice runs onto the cutting board. You want those juices in the meat, not on a sponge. So go make the gravy. Pet the cat. Take a victory lap.
What About Turkey Leftovers? (Because You’ll Have Them)
You made it. You conquered. But now you have four pounds of leftover turkey. What temp do you reheat it to? Not 165°F again—please don’t nuke it into jerky. Just warm it gently to 140°F in the oven (covered) or a quick zap in the microwave with a damp paper towel.
If you’re making turkey soup, same rule: simmer it to 165°F for safety, but don’t boil the poor thing. And for cold sandwiches? Just slap the cold meat between bread. You’ve done enough.
