Real vanilla extract comes from orchids, and it costs as much as a small car. Fake vanilla comes from a beaver’s butt. I’m not joking—castoreum, a natural flavoring from beaver castor sacs, is sometimes used. Don’t Google it. Just eat the good stuff and lie to yourself.
Fruit flavors are a whole other beast. Real fruit gelato uses real fruit, obviously, but also a little lemon juice or citric acid to keep the colors bright and the taste punchy. Ever had a pale, sad strawberry gelato? That’s the flavor of betrayal. Real fruit pulp stains everything, and we love it.
Nuts? Oh, baby. Pistachio gelato gets its green color from actual pistachios (and sometimes a touch of spinach extract, the clever liars). Almonds, hazelnuts, and pine nuts are toasted and ground into a paste that smells like a bakery exploded in a forest. If you see “praline” on the menu, that’s just a fancy way of saying “caramelized sugar with nuts.” Eat it immediately.
