Here’s the big reveal: at its heart, vinegar is mostly water and acetic acid. That’s it. No unicorn tears, no dragon scales. The acetic acid is what gives vinegar its eye-watering, lip-puckering personality.
Think of acetic acid as vinegar’s angry twin. When you smell that sharp, almost painful aroma, you’re getting a noseful of tiny acid molecules yelling, “I’m here to pickle stuff!” Without it, vinegar would just be fancy, sad water.
Side note: Don’t try to drink pure acetic acid. That stuff is for industrial use and will make you regret all your life choices. Stick to the diluted 4–8% version in your kitchen, which is perfectly safe—and delicious on fries.
