Water makes up 98% of your coffee, so don’t use hot tap water or filtered stuff that’s been sitting in a plastic jug for a month. Use fresh, cold, filtered water. Seriously. Your coffee will taste like a swimming pool otherwise. Yuck.
Heat it to about 200°F. No thermometer? Boil it, then wait 30 seconds. You want it off the boil, not screaming hot. If it’s bubbling like a witch’s cauldron, you’re about to burn those delicate flavors into ash.
