We’ve all done it. You open the container, sniff, and think, “Seems fine.” The smell test is about as reliable as a horoscope. Spoiled chicken can smell perfectly normal, especially if it’s been seasoned with garlic or spices. And safe chicken that’s been sitting too long can smell fine but still harbor toxins that microwaving won’t kill.
Your best defense is the calendar. Cooked chicken is good in the fridge for about three to four days. Mark it on your phone if you have to. After day four, even if it looks like a contestant on a cooking show, it’s time to say goodbye. I learned this the hard way after a “smells okay” chicken salad lunch that sent me to the bathroom for a private conference with the toilet.
