Color is the first liar. Most people grab a honeydew that’s a vibrant, grassy green, thinking it looks “fresh.” Nope. A good honeydew should have a creamy, pale yellow or even a slight golden blush. That green tint means it was picked too early and will never sweeten.
Look for a rind that looks like it’s been sunbathing, not hiding under a leaf. If it’s still bright green, put it back immediately—it’s not ready for your kitchen. Side note: avoid any melon with soft spots or bruises. That’s just a cry for help.
