Enter the heavyweights. A whole butternut or acorn squash is basically a superhero of the fridge. You can comfortably keep a whole, uncut winter squash in a cool, dry spot (not necessarily the fridge) for 1 to 3 months!
However, once you cut it open, the clock starts. You’ve broken its armor. Once cut, wrap it tightly in plastic wrap or put it in a sealed container. In the fridge, it stays good for 5 to 7 days. That’s still a whole week of soup, roasting, or risotto!
Fun fact: A cut winter squash will often get a little slimy on the cut surface. Don’t panic! Just trim off that thin layer and the rest is perfectly fine and delicious. Resilience is its middle name.
