Not all icings are freezer-friendly. Whipped cream frostings (the kind with heavy cream and sugar) will deflate into a watery puddle. Meringue-based icings, like Swiss or Italian meringue buttercream, are fine if stabilized, but plain egg-white meringue topping will weep and shrink. Stick to butter-based or cream-cheese icings, and you’re golden. Also, don’t freeze a cake with fresh fruit on top—berries turn to mush. Add those after thawing, right before serving.
