Head to your grocery store or butcher and look for beef marrow bones, chicken carcasses, or a mix of both. The secret is to get bones with some meat and connective tissue still attached. That’s where all the flavor and magic lives.
Don’t be shy about grabbing oxtail or turkey necks, either. Those weird cuts are cheap and packed with gelatin. Your wallet will thank you, and so will your taste buds. Also, you’ll look very rugged and “farm-to-table” throwing them in your cart.
You also need a tablespoon of apple cider vinegar. I know, it sounds like a witch’s ingredient, but it helps pull all those minerals out of the bones. Trust the process; it won’t taste like vinegar, I promise. It’s like a magical key for your bones.
